Ingredients:

3 cups apple juice
1/2 cinnamon stick
1 cup sugar or honey
1 inch fresh ginger, thinly sliced
1 piece star anise
2 apples, peeled, cored, and halved
2 tablespoons chopped toasted walnuts

 

Directions:

  1. Bring apple juice, sugar, cinnamon, star anise and ginger to a boil.
  2. Add apples, cover with parchment or a lid; simmer until tender approximately 10 minutes (depending on the size of the apples)
  3. Remove and sprinkle with walnuts. Serve with ice cream. Drizzle with honey. Sprinkle with Demerara Sugar for texture
