Cinnamon Poached Apples
3 cups apple juice
1/2 cinnamon stick
1 cup sugar or honey
1 inch fresh ginger, thinly sliced
1 piece star anise
2 apples, peeled, cored, and halved
2 tablespoons chopped toasted walnuts
- Bring apple juice, sugar, cinnamon, star anise and ginger to a boil.
- Add apples, cover with parchment or a lid; simmer until tender approximately 10 minutes (depending on the size of the apples)
- Remove and sprinkle with walnuts. Serve with ice cream. Drizzle with honey. Sprinkle with Demerara Sugar for texture
