Serves 4-6

Ingredients:

1 whole chicken, 3-6 pounds

2 lemons

2 tangerines or oranges

2 tablespoons assorted fresh minced herbs from CSA shares (basil, sage, thyme, rosemary, oregano, etc)

7-8 cloves garlic, sliced thin

½ small white onion

1 tablespoon salt

1 tablespoon black pepper

2 tablespoons olive oil

 

Directions:

  1. Preheat oven at 400 degrees
  2. Remove any innards that may be in chicken.
  3. Slice the citrus into ¾’ slices and mix with sliced onion, garlic, 1 tablespoon olive oil and 1 ½ tablespoons of herbs
  4. Stuff chicken with citrus herb mixture
  5. Place stuffed chicken on oven safe tray and bake in oven for 45 minutes to 1 hour or until chicken breast meat is 165 degrees in the thickest part.
  6. Allow to rest for 20 minutes before slicing/serving
