Spicy Sausage and Kale

Spicy Sausage & Kale


2 tablespoons oil

5 ea hot links sausage

1 tablespoon minced garlic

2 teaspoons crushed red pepper

1 bunch kale, washed and roughly chopped

1 tablespoon chopped oregano

2-3 tablespoons asiago or parmesan

1 cup chicken stock

Salt and pepper to taste



  1. In a large saute pan, sautoir or pot, brown sausage in oil, evenly on all sides
  2. Add garlic & crushed red pepper and sweat until aromatic, do not brown.
  3. Add kale and stir to coat, add stock and cover with a lid and allow to simmer
  4. Simmer for 20 minutes stirring occasionally
  5. Season with salt and pepper to taste
  6. Serve over rice, chickpeas, or other beans.
  7. Sprinkle/garnish with oregano and cheese.
